Overnight Refrigerator Steel-cut Oats

A very fast, very healthy breakfast! Not like regular oatmeal, steel-cut oats taste nutty and chewy. Because they take longer to digest, you’ll feel fuller for a longer period of time. And, according to the USDA, whole grains reduce cholesterol, high blood pressure and help prevent heart disease, cancer and diabetes. But, because they normally take about 40 minutes to cook, I’m happy to reduce that to about 7 minutes, if I can remember to prepare them the night before. By soaking them overnight to soften the grain, all that’s needed in the morning is the 2 minutes to warm them while you’re cutting up some fresh fruit. Delicious!

Serves:: about 2 cups Serves: 2
Ingredients:
  • 1 C Unsweetened Almond Milk
  • 1 C McCann’s Imported Steel-cut Irish Oats, or other steel-cut oats
  • 1 t Kosher sea salt, or to taste
  • 1 t Vanilla Extract
  • 2 T Agave, or other sweetener
  • 1 C Peaches and/or Blueberries, or other fresh fruit, cut into bite-sized pieces
  • 2 T Pepitas, or other unsalted raw seeds
  • 1 T Dried cranberries, or other dried fruit
Directions:
  1. In a microwave safe large jar or cereal sized ceramic bowl, combine almond milk, steel-cut oats, salt, vanilla, and agave.
  2. Cover tightly and refrigerate overnight.
  3. Stir, then microwave bowl for two minutes, or until heated.
  4. Or, you can heat on the stove, over low-heat until warmed.
  5. Add a splash more almond milk, if desired.
  6. Add fruit, or seeds, as desired.
  7. Serve warmed.
