Turkey, Red Grapes and Walnut Salad – Great for Lunch or Picnics!

For me, this is a classic picnic salad I’ve been making for many years. It’s that good! You can elevate it with more sophistication by including 2 teaspoons orange zest, 1/2 cup of peeled sliced kiwi (about 2), and 1/4 teaspoon allspice, but its really good with just a few ingredients for a quick and easy lunch or snack.

Serves:: 6 cups Serves 4
Ingredients:
  • ¼ C Best Foods Mayonnaise
  • 1 Peeled, mashed banana
  • 1 t Freshly squeezed lemon juice
  • 2 C (About ⅔ lb.) Cooked, cubed Turkey Breast, (cut into 4 slices)
  • 1 C Red Grapes, de-stemmed, Halved
  • 8oz. can Sliced water chestnuts, rinsed, drained
  • ¼ C Walnuts, coarsely chopped, toasted
  • ½ head Butter Lettuce, to serve upon
Directions:
  1. Cube turkey into medium-size pieces.
  2. Set aside.
  3. Stir together mayo, banana, and lemon juice in a medium bowl.
  4. Mix turkey, grapes, water chestnuts into banana mayonnaise mixture.
  5. Arrange on lettuce leaves.
  6. Serve immediately or refrigerate.
