Hot Green Beans, Tomatoes and Bacon

Super tasty! This is a great way to get more vegetables into your diet because it tastes so good. Just a few ingredients makes it convenient, too! I love to make this in advance. You can toast the almonds, cook bacon (saving drippings with shallot and garlic), chop shallot, puree garlic, steam, and then steam and chill green beans. Then, it will come together very quickly when it’s serving time. Just put all ingredients in the skillet to warm-up, cook and combine flavors for about 2 minutes. Easy! Time the cooking of your protein, such as chicken breasts, steak, fish, or pork to coordinate with when this is done. Then,  simply serve it with this beautiful side dish.

So much flavor! You may never have had such delicious green beans. Great for a special occasion, entertaining, or everyday!

Ingredients:
  • 12 oz Fresh Green beans, trimmed
  • 4 Strips thin bacon, cooked, roughly chopped
  • 1 Shallot, peeled, finely chopped (about ⅓ C)
  • 1 t Garlic, crushed, pureed
  • ¼ t Red pepper flakes, if desired
  • ½ C Toasted sliced Almonds
  • ¼ t Freshly ground pepper, or to taste
  • ¼ t Kosher sea salt, or to taste
Directions:
  1. Preheat oven to 400 degrees.
  2. Toast almonds for 4 minutes or until lightly browned. Set aside to cool.
  3. In a large pot, with a lid, filled with 1” water, and a steamer basket, bring to a boil.
  4. In a 12” skillet over medium-medium high heat, cook bacon until crispy, about 8 minutes, then place cooked bacon on a lined plate with folded paper towels. Set aside to cool. Then chop coarsely.
  5. Reserving the bacon drippings, about 2 tablespoons, reduce heat to medium-low heat, cook onions and garlic in skillet, stirring occasionally until soft and translucent, about 4 minutes.
  6. Place green beans into pot of boiling water, cover and steam for about 4 minutes, until tender but still firm. Pour out into a strainer over the sink to drain.
  7. Place tomatoes into skillet to warm. Add green beans and stir gently. Add bacon, almonds, red pepper flakes, and salt and pepper to pan, and stir to combine. Cook for one minute to warm. Pour onto a large platter and serve immediately.
