Hot Spinach, Avocado, Bacon & Egg Salad – Perfect for Entertaining at Brunch!

It’s delicious! This is such a convenient recipe to make in advance when you’re entertaining. Cook the hard boiled eggs, make the dressing, and cook the bacon, then refrigerate. When you’re ready to serve, have your spinach and herbs in a big bowl ready to go. In 30 seconds you can pour over the microwave reheated dressing and toss with the bacon and eggs. Just remember to serve right away or else the spinach gets too wilted and flat.

Ingredients:
  • 4 Slices Bacon (reserve 2 T bacon drippings), to garnish
  • Dressing ingredients
  • ¼ C Cider Vinegar or vinegar of your choice
  • 2 T Hot Bacon Drippings
  • 2 t Yellow whole Mustard Seeds
  • 1 t Grated Shallot
  • 1 t Granulated sugar
  • ½ t Kosher sea salt
  • ¼ t Freshly ground Black pepper
  • Salad Ingredients:
  • 4 C Loosely packed tender or baby spinach leaves
  • 3 Large eggs, hardboiled
  • 1 Avocado, peeled, cut into chunks
  • 2 t Minced fresh parsley, or fresh herbs of your choice
Directions:
  1. In a large salad bowl combine spinach and parsley or herbs.
  2. Remove any large stems from spinach.
  3. Set aside.
  4. In a large skillet over medium heat, cook bacon until crispy, about 10 mins.
  5. Drain bacon on paper towels.
  6. Crumble bacon when cool enough to handle.
  7. In same skillet with two tablespoons of bacon drippings, pour off extra, if any.
  8. Add vinegar, mustard seeds, onion, salt, pepper, and sugar to skillet.
  9. Bring to a simmer and cook for 1 additional minute.
  10. Remove from heat.
  11. Pour hot dressing over large bowl of spinach, parsley and herbs.
  12. Toss well.
  13. Add bacon and eggs and toss again.
  14. Serve immediately.
Notes
This recipe easily doubles or triples, if needed. However, it may be easier to cook bacon in the oven at 400 degrees for 20 minutes or until crispy on a cooling rack over a baking pan with sides. Still reserve the bacon drippings as usual, by pouring off into a microwavable container.
