Sweet Potato Nut Butter Kiwi Appetizers

Check out these fun and tasty appetizers! Sweet potatoes are a good source of nutrients like vitamin C and manganese, plus they provide filling fiber. They are also an excellent source of antioxidants—plus, the phytonutrients in sweet potatoes have been shown to have anti-inflammatory properties. To top it off, you’ll also add fiber-rich kiwifruit and flavorful heart-healthy almond butter.

Ingredients:
  • 2 Large Garnet sweet potatoes, peeled or unpeeled
  • 6 T Almond butter
  • 1 T Agave nectar
  • ¼ t Ground cinnamon
  • ¼ t Ground ginger
  • 4 medium kiwi, peeled, sliced
Directions:
  1. Move the oven rack to the top slot and preheat the oven to 375 degrees.
  2. Peel the sweet potatoes and slice into ¼" thick cross-wise rounds.
  3. Place the sweet potatoes on a small baking sheet lined with parchment paper, touching but not overlapping.
  4. In a small bowl mix together the almond butter, agave nectar, cinnamon, and ginger.
  5. Set aside.
  6. Place the baking sheet on the top rack of your preheated oven, roast for 10 minutes, flip, and roast for an additional 10 minutes.
  7. Turn the oven temperature up to 450 degrees, then continue to roast an additional 2-3 minutes on each side.
  8. Meanwhile, peel and slice the kiwi to ⅛-1/4” thick and set aside.
  9. When rounds are cool enough to handle, arrange them on a platter, place about a ½ teaspoon of the nut butter mixture on top, and top with the kiwi slices.
  10. Serve warm.
