Orzo, Raisin, Feta & Grape Salad- Love this salad!

This is such a family favorite! It’s also a fantastic side dish for a potluck or picnic, and works beautifully with chicken, pork or fish. This is the most versatile salad, and, you can make it year round!

Serves:: 6 cups
Ingredients:
  • 1 C Orzo (can use whole wheat)
  • 2 T Extra Virgin Olive Oil
  • 2 T Freshly squeezed Lemon Juice
  • 2 t Lemon Zest
  • ¼ Teaspoon Kosher sea salt
  • ¼ Teaspoon Freshly Ground Pepper
  • 2 C Red Grapes, cut in half
  • ⅓ Cup Crumbled Feta Cheese
  • ¼ Cup Chopped Fresh Mint (optional)
  • 2 T Shallots, finely chopped
  • ¼ C Golden Raisins
  • 3 Green Onions, both white and green parts sliced diagonally
Directions:
  1. Bring a large pot of water to a boil.
  2. Add orzo and cook according to package instructions or, until tender, about 8 minutes.
  3. Drain orzo in a small opening colander and rinse with cold water until cool, then set aside.
  4. Meanwhile, whisk together oil, lemon juice, lemon zest, salt and pepper in a large bowl.
  5. Add grapes, feta, green onions, mint, shallots, and drained Orzo to the bowl and gently combine.
  6. Test for seasoning, making any needed adjustments.
  7. Serve immediately, or covered and chilled in refrigerator.
  8. Will keep for up to a week, if refrigerated.
