Winter Fruit & Vegetable Salad with Honey Mustard Dressing

Giant white carrots are in season? No, it’s daikon and it’s available now! Since I’m always trying to incorporate more fruits and vegetables in my recipes, I sought out daikon, a mildly flavored radish that looks like a giant white carrot. It’s juicy and crisp, just perfect for a fall or winter fruit salad like this. It also contains lots of vitamins and cancer protecting potential along with digestive enzymes that helps break down food for better digestion…you’re welcome!

You've got to try daikon, a mild radish that's fantastic in this salad!

Serves:: 4 C Serves: 2-4
Ingredients:
  • For the dressing:
  • 6 T Extra virgin olive oil
  • 3 T Maille Brand Whole Grain Mustard
  • 3 T Apple cider vinegar
  • 1 T Honey
  • ¼ t Kosher sea salt
  • ⅛ t freshly ground black pepper
  • For the salad:
  • 2 Ripe pears, unpeeled
  • 2 Granny smith apples, unpeeled
  • ½ C Peeled, shredded or julienned Daikon radish
  • ½ C Peeled, shredded or julienned carrots
  • ½ C Pecans, chopped
Directions:
  1. Add dressing ingredients into a blender and blend until well emulsified.
  2. Thinly slice pears and apples and place in a large bowl.
  3. Peel radish and carrots, then julienne and add to bowl.
  4. Add dressing and pecans, and toss gently.
  5. Serve immediately or chill, covered tightly with plastic wrap for up to one hour.
  6. Cook's note: I like to use a 2-4" tall and 3-4" ring to plate this salad. Center ring on individual plate and gently spoon salad ingredients into it. Carefully remove ring without disturbing salad stack. It looks beautiful!
