Easy Black Bean Breakfast Side

I discovered this recipe when I was in a hurry at the spur of the moment! I needed something to serve with scrambled eggs, cheese and salsa and I was out of bacon and sausage. I wanted something that’s healthy AND that tastes really great. This fit in perfectly and it’s so much healthier! Some of my guests at the time just stirred in the eggs and it looked so beautiful that I make it like that now!

Serves:: 3 C serves: 4
  • 1 15oz. Can of Black Beans, rinsed and drained
  • 1 celery stalk + 1 T leaves, chopped
  • ½ red bell pepper, trimmed and finely chopped
  • 1 T Parsley, finely chopped
  • 1 T Shallot, finely chopped (about ½ )
  • ¼ t Cumin
  • ¼ t Freshly ground Black pepper or Berkman spices, moonshine (contains lots of peppers)
  • ½ t salt
  • ½ t Balsamic vinegar
  • 1 T Olive oil
  • 1 T Fresh lime juice ( ½ lime)
  1. Combine all ingredients in a medium bowl.
  2. Heat in microwave for one minute or until warmed.
  3. Serving suggestion:
  4. Serve warm with scrambled eggs topped with mozzarella cheese and salsa.
