Cinnamon Lemon Coconut Balls

Delicious snacks! These are low sugar, high protein, and just right for about 50 calories each. The lemon cinnamon combination is so delicious and a bit unexpected. It’s a good source of heart healthy mono and polyunsaturated fats. Just perfect with a smoothie as a quick meal-to-go, or as a power fueled snack!

Serves:: 36 1" balls
Ingredients:
  • 2 C Fine almond flour
  • ¼ C + 1 T Agave nectar
  • 2 T Almond oil
  • 2 t Lemon zest, (1 lemon)
  • 1 ¼ t Ground cinnamon, or to taste
  • ¼ t Kosher sea salt
  • ¼ C Shredded unsweetened coconut
Directions:
  1. Combine almond flour, agave nectar, almond oil, lemon zest, cinnamon, and salt in a food processor bowl.
  2. Process until mixture is well combined and clumps together slightly.
  3. Line a large plate or small baking sheet with plastic wrap and divide dough into 20 pieces.
  4. Roll each piece into a ball about 1” in diameter.
  5. Place shredded coconut in a small bowl and roll each ball in the coconut.
  6. Serve immediately or store covered in refrigerator until ready to eat.
  7. These freeze well if tightly covered.
