Baked Zucchini Slices with Yogurt Dipping Sauce

These are great little snacks you can feel good about eating! The deep frying has been replaced by baking these tasty little morsels. So good when served with the healthy dip, too. Give these a try!

Ingredients:
  • Dipping sauce ingredients:
  • ½ C Plain Low-fat Yogurt
  • 2 Garlic Cloves
  • 1 Cucumber, grated
  • 1 Pinch, Kosher sea salt
  • Baked zucchini slices ingredients:
  • 2 Zucchinis, Sliced into ¼” slices
  • 1 C Fat- free Buttermilk
  • 1 T Fresh Dill, chopped
  • Salt & pepper, to taste
  • 1 C Whole wheat bread crumbs
  • 2 T Parmesan Cheese, Grated
Directions:
  1. Pre-heat oven to 400 degrees.
  2. Line a large baking sheet with parchment paper, and set aside.
  3. Meanwhile, prepare the sauce by mixing all 4 ingredients into the bowl of a food processor until smooth.
  4. Cover tightly with plastic wrap and refrigerate.
  5. To a medium bowl, add buttermilk, dill, salt and pepper and stir to combine.
  6. Add zucchini slices to coat.
  7. In a small bowl, mix the bread crumbs and parmesan cheese together.
  8. Coat each zucchini slice with cheese/breadcrumb mixture and place on the prepared pan.
  9. Bake at 400 degrees for 10 minutes or until golden browned.
  10. Serve baked slices with the dipping sauce.
