Vegetarian Protein Bowls- Beans n’ Rice with Veggies

Vegetarian Protein Bowls- Beans n’ Rice with Veggies

Here’s one of my favorite protein bowls! Rice and beans create a complete protein, as filling as chicken or beef when eaten together, so vegetarians love it. This is just like making a burrito in a bowl. But, feel free to skip the tortilla and the meat if you’d like. Simply toss together any rice & beans (or quinoa instead), cheese, lettuce and tomatoes or salsa you have on hand. It’s hard to go wrong!
