No-Knead Savory or Sweet Beer Bread – Must Make!

This is a must-make bread recipe! My family goes crazy for the savory California version of this easy and relatively quick to make bread. No-knead Beer bread, is known as a sweet white bread in Ireland, but, it was actually invented by the Egyptians who invented beer. I’ve provided the plain soft soda bread (American version) that would have been made every day, perhaps using Guinness beer, by my ancestors in Ireland. This recipe makes a single flat round loaf of bread. You can use a loaf pan instead, if you prefer. Also, I’ve included my two favorite California craft beer style variations, sweet or savory!

Ingredients:
  • 3½ C Organic All Purpose flour
  • ¼ C Brown sugar
  • 5 t Baking powder (w/o aluminum)
  • 4 T Unsalted butter, melted (optional: can use olive oil instead, if desired)
  • 1 t Kosher sea salt
  • 12 oz. Sierra Nevada Pale Ale
Directions:
  1. Preheat oven to 375º F and lightly grease a small round cast iron or enameled Dutch oven with lid, using butter or non-stick spray.
  2. In a food processor bowl, combine flour, brown sugar, baking powder, (any seeds or nuts, if using) salt, and melted butter.
  3. Process for 30 seconds, to mix together.
  4. With processor running, slowly pour beer into processor feeding tube, while mixing for 30 seconds. Batter will be very sticky.
  5. Using a spatula, pour batter into Dutch oven, smoothing top. (Sprinkle cheese toppings, if using)
  6. Cover with lid, place in oven and bake for 45 minutes.
  7. Remove lid. Bake another 10 -15 minutes, or until lightly brown and toothpick inserted in center comes out clean. (Cheese will be browned, if using)
  8. Remove from oven onto a cooling rack, and let cool 20 minutes before removing from Dutch oven and slicing on a cutting board.
  9. Variations:
  10. A) Savory: 4 T Seeds such as chia, flax, pepitas, sesame + ½ Cup grated cheddar cheese or Parmesan cheese + 1 t ea. powdered onion and powdered garlic + ½ t Black pepper
  11. B) Sweet: ½ C Golden Raisins, + increase brown sugar to ⅓ cup + 1 T Orange zest + ¼ Cup chopped dates + ½ Cup Chopped walnuts
