Lemon Spice Roasted Cauliflower Florets – Great Side Dish!

This will make a cauliflower fan of you, if you're not already!

Serves:: Serves 6
Ingredients:
  • 1 Head of Cauliflower, stem removed and cut into florets (about 1 ½ lbs.)
  • 2 T Olive oil
  • 2 t Lemon zest
  • 1 T Lemon juice
  • ½ t Garlic powder
  • ½ t Black pepper
  • 1 t Zatarain’s Creole Seasoning
  • ½ C Parmesan Cheese, finely grated
Directions:
  1. Pre-heat oven to 450 degrees.
  2. Line a baking sheet with sides with parchment paper.
  3. Set aside.
  4. In a large bowl, place cauliflower florets.
  5. Drizzle with olive oil, then add and toss together the rest of the ingredients, except for parmesan cheese.
  6. Place cauliflower florets evenly on prepared baking sheet and cover loosely with aluminum foil.
  7. Bake for 15 minutes.
  8. Remove from oven.
  9. Uncover, sprinkle with parmesan cheese, and bake for another 15-20 minutes, or until lightly browned.
