Parsnip Apple Soup – Healthy and Delicious!

My favorite way to use parsnips in the winter! Parsnips look like white carrots, but they have a smoother, more subtle flavor. Still sweet, so combining with apples makes a perfect combination. You’ll love this unconventional pairing!

Serves:: 4 cups/serves 4
Ingredients:
  • 1 tablespoons olive oil
  • ¼ cup Golden onion, peeled, chopped
  • 1 Fuji apple, chopped, peeled
  • ½ t garlic clove, Peeled, chopped
  • ⅛ teaspoon freshly ground black pepper
  • 1¾ cups chopped peeled parsnip (about 4 Parsnips)
  • 3 cups Swanson’s Reduced-sodium chicken broth
  • ½ teaspoon salt (may omit)
Directions:
  1. Warm olive oil in a large pot over medium heat.
  2. Add onion; cook 5 minutes or until tender, stirring frequently.
  3. Add apples, pepper, and garlic; cook 1 minute, stirring constantly.
  4. Add parsnip, and chicken broth; bring to a boil.
  5. Cover, reduce heat to medium-low, and simmer for 30 minutes or, until parsnip is tender.
  6. Place parsnip mixture in a blender.
  7. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender.
  8. Place a clean towel over opening in blender lid (to avoid splatters).
  9. Blend on lowest speed, then increase speed as needed, until smooth: about 30 seconds.
  10. Pour back into a large pot.
  11. Check seasonings, adding salt if necessary; stir to combine seasonings.
  12. Serve hot.
