L.A. Turkey Taco Salad – Easy and healthy!

Low-fat, but delicious. This healthier version has all the rich spicy meat, but tasty substitutions like turkey will have you forgetting about the missing cheese and beef. Loaded with vegetables and flavor, you’ll love this L.A. version. It’s extra good by adding chopped avocado for “healthy fat”, if you’d like.

  • Salad Ingredients:
  • 1 lb Ground turkey meat
  • ¼ C Taco seasoning mix
  • ¾ C Water
  • 1 bag Sweet butter lettuce
  • 3 large Carrots, grated
  • ½ C Red cabbage
  • 3 T Fresh cilantro, chopped
  • Dressing Ingredients:
  • ½ C Smart Balance Omega Oil (canola, soy & olive mixture)
  • ¼ C Red wine vinegar
  • 1 T Lime juice
  • 2 t Taco seasoning mix
  1. Whisk together dressing ingredients until emulsified.
  2. Pour into a small bottle with a tightly fitting lid. Refrigerate.
  3. In a large skillet over medium-high heat, cook turkey until done.
  4. Remove from heat, pour off oil.
  5. Return to heat, add taco mix, water and bring to a boil.
  6. Reduce heat and simmer 5 minutes, until most of the moisture is gone.
  7. Set aside to cool. In a large bowl, add the lettuce, carrots, cabbage, cilantro and dressing, and toss, gently mixing together until lettuce is coated.
  8. Add cooked turkey and gently fold together.
  9. Serve immediately.
