Apple Cranberry Compote

- 6 C Apples cored, diced; about 5-6 (use baking apples)unpeeled
- 1 T Ground cinnamon
- ½ t Kosher sea salt
- ½ C Orange juice + 1 orange zested
- ¼ C Molasses
- ¼ C Coconut oil
- ½ C Dried Sweetened Cranberries; add after cooking
- 2 t Vanilla Extract
- Garnish with pecans and fresh raspberries, if desired
- Chop apples into ½-1" chunks; Leave peels on.
- Add all ingredients, except cranberries and vanilla extract to the Instant Pot.
- Set valve to seal. Set timer to pressure cook for 4 minutes.
- Release using quick release or natural release.
- Serve warm or chilled.
