Roasted Vegetable Side Dish - Easy and so flavorful!

So convenient and delicious!
Ingredients:
  • 1 C Broccoli florets, cut into bite-sized pieces
  • 2 C Carrots, thinly sliced on the bias
  • 1 C Red bell peppers, seeded, cut into large strips
  • 1 C Yellow Bell peppers, seeded, cut into large strips
  • 2 T Fresh lemon juice (about ½ lemon)
  • Salt & pepper, to taste
Directions:
  1. Preheat oven to 425F degrees.
  2. Place the chopped vegetables onto a glass 9 x 13 baking dish, and drizzle with lemon juice.
  3. Season with salt and pepper, to taste.
  4. Roast for15-20 minutes, tossing half way through, or until carrots are fork tender.
  5. Serve warm.
