Healthy "Carrot Cake" Oatmeal - Only 283 Calories!

Yes, it really tastes like carrot cake!
Ingredients:
  • ⅔ C Old Fashioned Rolled Oats
  • 1 C Water
  • ½ C Grated carrot, about 2 and up to 4 carrots
  • ¼ C Unsweetened applesauce
  • 2 T Raisins
  • ½ t Vanilla Extract
  • ½ t Ground cinnamon
  • 1 pinch Kosher sea salt
  • ¼ C Unsweetened Almond milk
  • ¼ t Chia seeds, optional
  • 2 T Walnuts, coarsely chopped
Directions:
  1. Place first 9 ingredients, ending with salt, into a large microwaveable bowl.
  2. Cook on high in the microwave for 4 minutes.
  3. Allow to cool in oven for one minute.
  4. Stir in almond milk.
  5. Top with chia seeds and walnuts.
  6. Serve warm.
