Banana Nut Cookies- Tastes just like the bread only faster to make!

Tastes just like banana nut bread, only crispier!
Ingredients:
  • ¾ C Unsalted butter, softened
  • ½ C Granulated sugar
  • ½ C Brown sugar
  • 2 Large eggs
  • 1 t Vanilla extract
  • 1 C Whole wheat flour
  • ½ C All purpose flour
  • 1 t Baking soda
  • 2 t Baking powder
  • ½ t Kosher Sea salt
  • ½ t Ground cinnamon
  • 2 Bananas, ripe and peeled
  • 1 C Chopped walnuts
Directions:
  1. Arrange oven racks to the upper third and the lower third of your oven.
  2. Preheat oven to 350°.
  3. Cover two large baking sheets with parchment paper, spray lightly with baking spray and set aside.
  4. In a mixing bowl, cream together butter, sugars, egg and vanilla.
  5. Fully mash banana in a separate bowl, then add to sugar mixture.
  6. In another bowl, mix dry ingredients and nuts, once blended, add to sugar mixture, and stir just until most of batter is mixed and wet.
  7. Fifteen or 16 each prepared baking sheet, drop by evenly rounded tablespoons onto greased baking sheet allowing enough room for cookies to spread at least 3” wide.
  8. Cook for 14-16 minutes, or until lightly golden brown and mostly firm; reversing position of baking sheets by changing to other rack and turning each sheet from front to back, half way through.
