Mashed Sweet Potatoes with Apple Butter & Pepitas

Just right for a tasty Thanksgiving side dish!
  • 4 lb. Sweet potatoes (about 4)
  • 6 T Unsalted butter, at room temperature
  • ½ C Apple butter
  • Salt, to taste
  • ¼ C Roasted Pepitas, (hulled pumpkin seeds) to garnish if desired
  1. Preheat the oven to 350°.
  2. Pierce the sweet potatoes all over with a fork and place on a large rimmed baking sheet.
  3. Bake for 1½ hours, or until very tender.
  4. Peel the sweet potatoes and transfer to a large bowl.
  5. Mash with a potato masher until creamy, then mash in the butter and apple butter.
  6. Season with salt, mix, and garnish with pepitas and serve.
