Rainbow Vegetable Roll-ups - Simple & Tasty!

  • 1 C Philadelphia Whipped Cream Cheese
  • 2 t Hidden Valley Ranch Mix
  • ½ C Carrots, trimmed, peeled, shredded (About 2 carrots)
  • ½ C Red Cabbage, shredded finely
  • ½ C Yellow Bell Pepper
  • ½ C Red Bell Pepper
  • ½ C Celery, chopped finely
  • ½ C Baby Spinach Leaves
  • 4 9” Spinach Tortilla’s or wraps
  1. In a medium bowl combine cheese and dry ranch mix.
  2. Lay each of the tortillas flat, spread with about ¼ cup of the cheese mix.
  3. Spread thinly and nearly to the edge on each tortilla.
  4. In rows, side by side, arrange about 2 tablespoons of each of the toppings, in the same direction.
  5. From the long side, tightly roll each tortilla, then, slice crosswise into 2 inch rounds.
  6. Lay flat on a platter and serve immediately.
