No need to ruin your diet with this soup! It’s a healthier version of the classic soup that still tastes luxurious and delicious. And, if that wasn’t enough, it’s also quick to make. Creamy Broccoli Carrot Cheddar Soup

1T Olive oil
1 Yellow onion, chopped (1/2 cup)
1 T All-purpose flour
1 t Kosher sea salt
3 C 2% or, fat-free milk
1 C Carrots, shredded into 3” long pieces (I buy store-bought shreds in packages)
1 ½ C Mild Cheddar cheese (6 oz.), finely grated
3 C Broccoli florets, chopped small
Garnish with fresh green leaf of your choice, if desired
In a large saucepan, heat oil over medium heat. Stir in onion, flour and salt. Cook 2 to 3 minutes, stirring constantly, until onion is soft.
In small bowl, stir milk and cornstarch with wire whisk until smooth. Gradually stir into onion mixture. Add carrots and cook 5 to 6 minutes on medium heat, stirring frequently, until thick and bubbly.
Stir in cheese. Cook about 3 minutes, stirring frequently, until cheese is melted. Stir in broccoli. Cook about 1 minute or, until hot and fork tender, stirring occasionally.
