Both the strawberries and the spinach are grown fresh, not far from Carmel by the Sea, the beautiful California beach city along the Monterey Bay. Carmel Strawberry Spinach Salad Recipe
Dressing ingredients-
1 T Honey (Avocado honey is great in this)
¼ C Aged Balsamic Vinegar of Modena
Pinch of Salt, or to taste
½ C Extra virgin olive oil
Salad ingredients:
1 bag Baby Spinach leaves
20 large Strawberries, sliced
½ C toasted Almonds, sliced
Blend the first four dressing ingredients briefly in a blender or food processor. In a thin stream, slowly add olive oil, so dressing will remain mixed. Set aside. Slice strawberries in a small bowl. Set aside. Gently toss spinach and dressing in a large bowl; add strawberries and mix, adding more dressing as needed. Garnish with almonds and serve. Serves 6.
