Big Sur Spinach Tomato Scramble Wrap
Ingredients:
4 eggs, well beaten
2 T Lucerne Fat-Free Cream Cheese
1 C Fresh baby spinach, chopped
1 C Plum tomatoes, chopped
2 T Green onion, chopped + extra for garnish
1 Garlic clove, finely chopped
Salt & pepper, to taste
4  La Tortilla Factory Multi-grain soft wrap tortillas made with olive oil and 12 grams of fiber
Directions:
In a medium skillet over medium heat, sauté garlic for 30 seconds. Add eggs and scramble until nearly done, add green onions and spinach to wilt. In 30 seconds, add tomatoes and season with salt and pepper. Set out four tortillas and divide egg mixture between them. Tightly roll each wrap like a burrito and slice on the diagonal in two. Garnish with extra green onions and serve as shown. Serves 4.
