High-Fiber Bliss Balls

A Treat Made with Healthy Fats and High-Fiber:

This recipe is loaded with flavor and the delicious taste of dried prunes, a cross between dates and raisins, this sweet but healthy treat may prevent you from eating too much. The fiber makes you feel fuller, so you’re less hungry, and that can make you eat less. But the benefits are long lasting, too.

High-fiber for Cancer Prevention and Heart Health:

A benefit of a high-fiber diet is that it may help prevent colorectal cancer, because it normalizes bowel movements and prevents constipation. Which many common prescription medications can cause. But, it also has heart-healthly benefits, such as reducing blood pressure and inflammation, too.

I continue to make these over and over again because they are surprisingly delicious!

These tasty treats are full of fiber that tastes delicious and is good for you!

Serves:: 6-10 Makes 12-20 balls
Ingredients:
  • ⅓ C Chunky Peanut Butter
  • ⅓ C Walnuts
  • ⅓ C Unsweetened shredded coconut + extra to garnish
  • ⅓ C Dried prunes (about 8)
  • 2 T Agave nectar, honey or maple syrup
Directions:
  1. In a food processor, combine all ingredients and process for 15 seconds.
  2. Stop to open and scrape down sides of processor bowl.
  3. Continue to process until mixture is well combined, about another 10 seconds.
  4. Remove lid and blade, scoop mixture with a spoon into small balls or use a scoop to create 1-2” balls.
  5. Continue rolling into shape, making 12 to 20 balls, or until all dough is used.
  6. Cover with plastic wrap and refrigerate for 5 minutes.
  7. Remove from refrigerator and re-roll balls for rounder shape if desired.
  8. Garnish with extra coconut if desired.
  9. Serve immediately, or cover and refrigerate for up to 3 days.
