Butternut Squash, Peas & Carrots – Use frozen to save time!

So lovely and easy! This is a perfect example of make-ahead meal preparation. You can serve the vegetables immediately or, with cooked quinoa for a delicious meatless meal, or, refrigerate for lunch or a light dinner later in the week. I love this pretty and delicious combination but, the key is to find frozen (or fresh) vegetables that are cut in the right size to require the same amount of cooking in the microwave. Check the back of the bag for the number of minutes required for microwave cooking. Of course, you can combine any vegetables if you cooked them separately. This combination is easy!

Cook these together for a quick and delicious side dish!

Serves:: 4-8 Makes: 4 Cups
Ingredients:
  • 2 C Frozen Butternut Squash Chunks
  • 2 C Frozen Peas and Carrots
  • 2 T Water
  • Salt and pepper
Directions:
  1. Combine frozen vegetables in a medium bowl.
  2. Add water.
  3. Place in a microwave on high for 4-5 minutes (according to package directions), or until crisp but, fork tender.
  4. Remove from oven; season with salt and pepper, to taste.
  5. Serve warm.
  6. Will keep in refrigerator for about a week, if cooled first, and then tightly covered.
